Rhubarb with Coriander and Lime


1 lb rhubarb, sliced into 1/2 inch rounds
1/2 - 2/3 cup granulated sugar (depending on the sourness of your rhubarb)
1 T ground coriander
zest of one lime
1 T butter

Mix rhubarb with sugar in a medium bowl and allow to sit for 45 minutes to one hour. After juices have developed, transfer rhubarb to a medium saucepan. Heat the rhubarb over low heat for 15-20 minutes, or just until tender. Remove from heat and add coriander, lime zest, and butter. Stir until butter melts.

Serve warm, at room temperature, or cold.
