Rosemary Roasted Potatoes
A.K.A. Rosemary's Baby Potatoes
1 lb baby potatoes (quartered) or larger potatoes cut into a 1-inch dice
2 T olive oil
2-3 fresh rosemary sprigs, chopped
Preheat oven to 425º
Toss potatoes with olive oil and rosemary.
Spread on a parchment lined baking sheet. Roast for about 30 minutes, or until potatoes are browned and crisped on the outside. Toss with sea salt (to taste). Enjoy!
