Caramelized baked apple pancake
3 T unsalted butter
1/4 tsp kosher salt
3 T brown sugar
1 tsp ground cinnamon
1/2 tsp freshly ground nutmeg
2 all purpose apples, cored and sliced
1/4 cup dried cranberries
3 large eggs
2 T granulated sugar
1 tsp vanilla
1/2 cup sour cream
1/4 cup whole wheat flour
1/4 cup unbleached white flour
1 tsp baking powder
1/4 tsp kosher salt
Preheat oven to 400ยบ
Combine salt, sugar, cinnamon, and nutmegin a small bowl. Stir to combine.
In a large cast iron skillet, melt the butter over medium heat. Add apples, and sprinkle them with the spiced sugar mixture. Saute the apples in the butter until just beginning to get tender - 5-7 minutes. Add cranberries and stir to distribute evening over the bottom of the pan.
In a medium bowl, whisk eggs, sugar, vanilla, and sour cream until thoroughly combined. Whisk in flour, baking powder, and salt just until blended. Pour batter into the cast iron pan on top of the apples.
Bake for 20 minutes, or until the pancake is puffed and golden. Remove from oven and allow to stand for 10 minutes before turning the pancake out onto a platter.
Serve sliced into wedges with powdered sugar and creme fraiche. Or maple syrup. Or more apples. Or whatever your heart desires.
