On a chilly morning, simply the smell of this oatmeal cooking will get you up and running. The cocoa nibs add a bit of texture, as well as a subtle chocolate flavor.
Spiced Cranberry Oatmeal with Cocoa Nibs
serves 2
1 inch cinnamon stick
2 green cardamom pods
1 T cocoa nibs
1/2 cup dried cranberries
1/2 cup oatmeal
1 1/2 cups vanilla soy milk
Place all ingredients together in a medium saucepan. Bring to a boil. Turn down the heat and allow to simmer for 20 minutes.
Remove cinnamon and cardamom before serving.
