Milk Gravy with Mushrooms

Try this delicious vegetarian gravy with biscuits. Or do as we did and pour it over the top of cornmeal waffles.

Milk Gravy with Mushrooms

2 tsp olive oil
8 oz mushrooms, sliced
3 T butter
3 T all purpose flour
1 1/2 cups milk
1 tsp mushroom base
freshly ground black pepper, to taste

Heat olive oil in a medium saucepan over medium-high heat. Add mushrooms and saute until the mushrooms have released their juices and browned slightly. Add butter and stir until melted. Add flour, stir thoroughly, and allow to cook for 1-2 minutes.

Slowly add milk, stirring constantly to prevent lumps. Allow the gravy to cook until thickened; add additional milk if you'd prefer a thinner gravy. Finish with black pepper. Serve warm.
