Shallot Mustard Sauce

Ingredients:
3 tablespoons butter
¼ cup minced shallot
¼ cup white wine
¼ cup heavy cream
3 tablespoons mustard
1 tablespoon fresh lemon juice

Directions:
Place butter into a small skillet. Add shallots and stir to combine, sautéing until shallots are tender. Add wine and whisk until alcohol dissipates and wine emulsifies with remaining butter. Whisk together cream and mustard and add to the wine mixture, whisking constantly to combine. Whisk in lemon juice to finish.

Lovely classic flavors. I've made a variation or two on this one over the years. You really can't go wrong with shallots, wine, mustard, and cream.
