Basic Sauteed Garlicky Greens

Basic Sauteed Garlicky Greens

2 T olive oil
1 small onion, diced
3 garlic cloves, minced
1 lb kale or collards (you can also use chard or spinach, but be sure to reduce the cooking time)
1/4 cup water (or broth)
salt

Heat 2 T olive oil in a large skillet or saute pan over medium heat. Add onions and sautee 3-4 minutes or until almost tender. Add garlic and saute for 1-2 minutes, being sure not to let the garlic brown. Add greens with 1/4 cup water and a scant sprinkling of salt (if desired). Cover and allow to steam for 7-8 minutes, or until greens are tender.

These greens are excellent sprinkled with vinegar.
For some kick, add a jalapeno or two to the onions... or sprinkle with pickled jalapeno slices or chopped eschabeche.
