Blasted Broccoli

This recipe, inspired by Black Bottle gastro-tavern in Seattle, is an absolute knock-out. The broccoli is crisp-tender, with just a hint of smoke from being cooked at very high heat. We love to play with the seasonings -- curry one night, a bit of cayenne pepper another. The possibilities seem endless.

2 tsp olive oil
2 T butter, melted
6 cups broccoli, chopped into florets
1 1/2 tsp granulated garlic
salt (to taste)

Preheat oven to 450ºF for about 1/2 hour (we often use our "convection roast" feature to ensure that the heat level stays very stable). You want the oven to be VERY hot.

Toss broccoli with oil, butter, and seasonings. Place on sheet pan and place in oven. Roast broccoli for 12-18 minutes, or until crisp-tender and beginning to brown.
