A fresh cherry tomato is a wonder in and of itself. But, nothing compares to a cherry tomato that's been exposed to heat for a while -- just long enough, in fact, that it collapses and caramelizes into a mass of lush tomato sweetness. These are perfect as a side dish tossed with some fresh basil. They're also great thrown in pasta or on top of pizza.

Roasted Cherry Tomatoes
2 cups cherry tomatoes, washed and dried
4-5 cloves of garlic, peeled and smashed
2 T olive oil
a pinch of red pepper flakes
a pinch of sea salt
Preheat oven to 350ºF
Toss tomatoes with olive oil, garlic, red pepper flakes, and salt. Spread out on top of a parchment covered baking sheet.
Bake until tomatoes have collapsed and are beginning to brown, 30-40 minutes. Discard the garlic before using.
