Sour Apple & Kraut Quesadillas

Not really a "recipe," but we love this combination of sweet/tart/salty. Great on their own for lunch, these also make a great accompaniment for Smoky Sweet Potato Chowder. Use the tangiest apples you can find for this recipe.

Sour Apple & Kraut Quesadillas

4 whole wheat tortillas
1 small sour apple, cored and sliced
1/2 cup sauerkraut, drained
10 thin slices sharp cheddar cheese (we also like horseradish cheddar for these)

Divide apples evenly between two tortillas. Top with a sprinkling of sauerkraut, and finally the slices of cheddar.

Heat grill pan or skillet over medium-high heat. Place one quesadilla at a time on the skillet, cooking until browned on the one side. Flip over and brown the remaining side.

Allow to sit for 4-5 minutes before slicing into pie-shaped pieces.
