This salad is the epitome of all that is lovely about a late summer meal. The sweetness of grilled corn is the perfect foil for the pepper bite of arugula. Combined with a few sweet late season radishes, a bit of gorgonzola, and a creamy, peppery dressing, and you have a salad with some serious bite.

End of Summer Corn and Arugula Salad
serves 4 as a side salad
Three pepper buttermilk dressing:
3 T mayonnaise
1/4 tsp cayenne pepper
1/2 tsp black pepper
2 tsp lemon juice
3-4 tsp buttermilk
1 small clove garlic, minced
4 radishes, cubed
1/2 of a small red onion, diced
2 ears grilled corn, cut off the cob
4 cups chopped arugula
1/4 cup crumbled gorgonzola cheese
First mix together the ingredients for the dressing. Whisk all ingredients to combine, adding as much buttermilk as needed to make the dressing pourable.
Toss dressing with grilled corn, radishes, and red onion. Add arugula and toss together gently.
Serve salad with gorgonzola crumbled over the top.
