Chipotle Slaw
serves 4-6
2 chipotle peppers in adobo sauce, finely chopped
1/2 cup mayonnaise
1 clove garlic
1 1/2 T honey
1-2 T freshly squeezed lime juice
1/2 tsp kosher salt
1 package broccoslaw (or 2 cups shredded cabbage and carrots)
Combine the chipotle, mayo, honey, and salt. Stir to combine. Add lime juice to taste and mix thoroughly. Toss with broccoslaw and adjust seasonings to taste. Allow to sit for about 1/2 hour before serving.
