Sourdough Waffles with Bacon and Cheddar

These all-in-one savory waffles are the perfect brunch treat on a lazy weekend. They also make a great dinner for a busy weeknight. A freshly fed sourdough will give you the most tender waffles. I like to make these the morning after a good feeding.

makes 4-6 round Belgian waffles

1 cup sourdough starter (preferably freshly fed)
1 egg, slightly beaten
1 tsp water
1/4 cup oil
1/4 tsp salt
1 T sugar
1/2 tsp baking soda
1/2 cup flour
2/3 cup cooked, chopped bacon (or ham, or sausage...)
2/3 cup cheddar cheese (or mozzarella, or provolone...), 1/8 inch dice

Place starter in a medium mixing bowl. Add egg, water, and oil. Stir to combine. Mix flour with salt, sugar, and baking soda and add to starter mixture. Allow to sit for 5 minutes or so.

Stir in chopped bacon and cheese. Pour into waffle maker about 1/2 cup at a time.
When lightly browned and cooked through, remove from waffle maker.

These can be kept warm in a preheated 200ยบ oven.

Serve with butter and syrup.
